Surely it's a personal preference? I find myself wishing for a large range cassette on the roadie with the hills and mountains around here. That said a 40t is seriously big seeing as mountain bikes only just started using 40t and above when the 1x drivetrain came about. I imagine you're running a 38/54 at the front? I would be happy with a 32 at most at the back, but i'm naturally a bit of a spinner and ride at a high cadence.

On the roadie I run a 39/54 with 11/28 cassette. It was never my choice though as my mate left his bike at my house and I have slowly taken ownership of it. The cassette has a good spread but I should probably drop to a 38t front for more comfort on climbs. My MTB I Run a 50t with a 34t front.
I live in Cape Town and if you want to check out the mountains I ride in I would say my 'gram account has some decent shots
