Delectable Desserts from India (Part 1) - Sutarfeni

There are not many desserts that get my tastebuds going, especially those that are ultra rare and next to impossible in being available in the UK!

I am talking about none other than Suterfeni a sweet treat from India...

A very delicate shredded, flaky rice flour based dessert, roasted in clarified butter (ghee) with melted sugar to form a cotton candy like form and topped with finally chopped pistachio and almonds.

The dessert comes in a few varieties, but my absolute favorite is the one that is golden yellow in colour, scented with floral essence of rose water and flavored with saffron, which by the way is one the world's most expensive spice!

Looks pretty good. Over here in the states the Indian restaurants usually just have Gulab jamun, Rasgulla, and rice pudding of sorts. Hopefully we'll get a little bit more of a variety one day!

Thank you, it tastes even better then it looks! Here in the UK, the variety of indian desserts served has gone up significantly, but I am still wait for the day when this particular dessert appears on a menu!
