DIY Kiriboshi Daikon

Hi there 🍂
Autumn is finally here and after the super hot summer days it’s a big relief (^∇^)

The last couple of weeks were extremely sunny so I decided to seize the opportunity and dried some Daikon.

I’ve dried it for the first time last year to have some for the Japanese stews.
They dry it themselves in Japan or buy it in the supermarkets. Either way it’s delicious and I’ve missed it 🙊

While it’s drying I’m busy learning Python, working on a picture book draft for a contest (even made a separate account for these two projects) as well as thinking about next year, where I’d like to go and what I’d like to do. Kinda exciting )^o^(

Making Kiriboshi Daikon

or how to sun dry giant white radish 🌞🍂

I dried two radishes since they weren’t very long.

The thinner you cut them the faster they’ll dry, which is a plus since the autumn sun isn’t as strong anymore.

There are many ways to do it, but this one seems to be the fastest. (Some people cut it in circles and put them on a string, which looks nice but takes a lot longer to dry🌞)

I hang them on the wired hanger and leave on the sunny window to dry ^^ the sweet smell is intoxicating.

When the pieces of the radish are completely dry I put them in a ziplock bag until I start on those winter stews 😋 in a couple of months.

do you prepare foods for winter months too? what kind?

Do you dry daikon in Korea as well? It's very delicious when rehydrated and cooked :)

Looks super gorgeous weather it was!!

It was a beautiful Indian summer :) just enough to dry two small daikon radishes.

Wow sun drying them is a lengthy process, I hope it doesn't take away the flavour?

the flavour changes and becomes more rich and sweet. It's usually used in stews and salads after rehydration :)

市販のしか使ったことないです。

UGHHH why did I not make this earlier! the sun is slowly disappearing now. But, how does it taste? can I mix them with miso soup? or mushroom soup?
