Cook fresh shrimp in the pot. Simmer stock for 1-2 hours. Saute minced pork in a skillet until fully cooked. Boil quail/eggs in a separate pot. To assemble: Add cooked noodles, lean pork slices, shrimp, boiled eggs, and sliced chives in a bowl. Pour in stock and then top with fried garlic. Enjoy with soy sauce and fresh bean sprouts.
