Tripe Soup - Шкембе Чорба - Bulgarian culinary classic

Tripe Soup is very popular in Bulgarian lunch breaks, its is fairly easy to make, if you know what you are doing.

  • Wash the tripe and put it in pot with water and boil it for 30 min (everything dirty will flow to the top.)
  • Discard the dirty water, wash again the tripe and put it in a clean pot with clean water with salt, bay leaf, and allspice
  • Let it gently boil for 3 hours.
  • After that you just have to fry up some sweet paprika in butter
  • Add the broth
  • Add milk
  • Let it all boil again and its ready.

Serve with garlic in vinegar and hot paprika
