In the same way "the word of God" that the Quranic verse is about, is pointing specifically at the final word of God, which is Quraan, which it is claiming to be perfect.
It is an understood fact, that we know through Quraan and also through other historical accounts that the Bible and the Torah and teachings of the earlier Prophets (which were originally the true teaching from God) were manipulated by people, i.e. corrupted.
