That looks delicious! You know I didn't try pumpkin until this year when I was in Mexico. I couldn't believe how good it was. I have always just thought it was just something we use for Halloween and roast up the seeds! Just recently I used pumpkin in the food processor and made a mock sweet potato dish to fit in with my Ketogenic diet, as it is lower in carbs than using real sweet potato. It was delicious!
