Using as many parts from the original Audi A6 C4, worked well with my original prototype, but unfortunately the new 2.7T A6 uses many different parts, that I don’t think I can use.
Steering design is very complicated, but there are some obvious issues that can catch out even the best kitcar or custom car designer.
So parts from a second donor car may need to be sourced for the turbo chassis build.

I know very little about cars but even so, I'm amazed by your project. Looks like you have your hands full, lots of work still with many unexpected problems that need solutions. Yes you’re right. I would fit a removable steering wheel in the race car build (If I ever get the funding), but it is planned.
I hoping the build of the prototype should take a year, once I have funding, but if this car is ever offered as a kit, then I think the whole car could be built in 6 weeks, depending on spec.
