Ingredients:
- 1 Pork Rib (Approx. 2 Kilos).
- 4 Crushed Garlic Teeth.
- 2 Garlic Teeth.
- 2 Large Onions
- 1/2 cup of sugar.
- 1/2 Cup Of Cátsup.
- 1 Teaspoon Of Black Pepper In Grain.
- 1/4 Cup of Fresh Lemon Juice.
- 1/4 Cup Of Apple Vinegar.
- 1/4 Cup of English Sauce
- Salt and pepper.
- 1 Teaspoon of Mustard
Preparation:
- Prepare the pork rib, Removing the fat and the membrane.
- We boil water in a large pot with an onion in pieces, the two cloves of garlic, a pinch of salt and peppercorns, when the water is boiling, put the ribs to boil and cover. Lower the heat to medium and leave an hour in slow cooking until the meat is well cooked.
- Meanwhile prepare the BBQ sauce (or Barbecue) and for this we are going to chop the onion finely and put it in a pot with a few drops of vegetable oil. Sauté a couple of minutes and add the crushed garlic, apple cider vinegar, English sauce, ketchup, sugar and lemon juice. We bring to medium heat to boil. Now we lower the heat to the minimum, add the teaspoon of Dijon mustard and season with salt and black pepper. Stir and leave on fire for about 20 minutes so that the sauce thickens.
- At the end of the cooking time, remove the ribs from the water and place them on an oven tray. Then cover them with plenty of BBQ sauce and put them in a hot oven at 175ºC for half an hour. After fifteen minutes we remove the ribs from the oven, add more sauce and bake them for the remaining 15 minutes.
Note: Step 4 I obviate why I made them on the grill. Take the ribs and with a brush pass a little sauce and put them on the grill turning to leave the mark and then bathe with plenty of sauce, I gave a part more turns and ready.
