Bocachico

Bocachico

River fish, that is the bocachico, a fish that in most cases can only be eaten in season and the best season is August when the Orinoco River is swollen. Well, also in this season you can eat the famous Sapoara, but I will be very honest with all of you, I do not like the Sapoara.

What happens with these fishes and why you can only get them in the season of the Orinoco River flood is because these fishes are lagoon fishes and when the river grows and enters the lagoons that are formed on the sides of the river along its long and wide path, well in those lagoons is where they breed and grow in those same lagoons these fishes are disobedient and the eggs are burned at the bottom when the river begins to lower its waters these lagoons are left without access to the river.

That's why we can get these fish in the season of the river swollen, then as these fish are from the Sapoara lagoon in particular the meat has a muddy taste or as if you were eating dirt. I don't like that taste, that's why I don't eat Sapoara.

Now, with respect to the bocachico its flavor is less earthy and when eaten fried it is tastier, but you must be careful with the spines, the bocachico has many spines so fried it is tastier because those spines are as well as toasted by frying and are crispy when you bite it. But you still have to be careful with those spines.

My daughter had a birthday party on August 23rd and that day we all ate fried fish.
