1 stalk lemongrass, geprek
1 bay leaf
4 orange leaves
2 cm ginger, geprek
2 cm galangal, geprek
5 red chili pepper

Puree onion, garlic, hazelnut and turmeric with a little water.
Heat oil, saute lemon grass, ginger, galangal, lemon leaves and bay leaves then, stir briefly then add the spices smooth, stir-fry until fragrant. Set aside.
In different pots enter water, stir-fry seasonings, fish, sweet soy sauce, pepper, salt and sugar.
Boil until the fish is cooked or discolored.
Add whole cayenne pepper and basil leaves. Cover the pan and cook for 10 minutes until the spices soak.
Pindang Fish ready to serve. Give a sprinkling of fried onions if you like
