We have half a dozen kitchens cooking food, and each one does 5 to 10 gallons of food. I am in charge of the madhouse that is cooking, and my buddy makes sure that the equipment is fine, and present.
We have a 6,000 watt generator down, and a 3000 watt leaking gasoline. so he will be busy this month! They 3000 watt is an easy repair, but the big boy is not. I hope we don't have to buy another one!
We had two 6 gallon stock pots donated last week, that are helping already.

The motor runs fine, it just does not make power. Actual generator damage possible, breakers okay.
I may need to look at it. It is past what Billy can fix.
The 6,000 watt unit will cost about $750 to replace, so I hope we can fix the unit!

If it is fixable...the generator is spinning, with no electrical output. May have burned out the actual generator part itself.
Well, the gas engine runs well, and we may find another generator unit. But we must have more generator power! We did not have enough power last Sunday, and we were short 5 roasters! Each roaster draws 1500 watts, so we need 7500 watts more.
We have 9000 watts if we get both running. Based on that, we need at least one more new one.

Well, you guys do need a building then so you don't have to use the generators and aren't those things awful loud to have running right there behind the tables?

If we have trouble with any generator, we have to allow a roaster to grow cold. We need another, just to have a buffer, in case one breaks when we need it!
We set the generators up downwind on the far side of the trailer. We have one person that watches them for tripped breakers.
In winter, the roasters just run harder, and we wear lots of warm clothes. The coldest we have served was at 19 degrees, and it was a success. They really liked the HOT food that day. ROFLOL! We do coffee and hot chocolate, when it gets cooler; that sure is popular!

We serve three basic meals, plus Thanksgiving turkey. The Beef stew we just finished, Tex-Mex, and Italian are alternated. We have au gratin potatoes, Mac and cheese, and chilli every time; by request. We always have sweet stuff the Ladies make, and when I get crazy, we make a kitchen sink salad.
You got some recipes for 300 you want to share? Always looking for something to add, ROFLOL!
