Hello friend of the farm, today I'm going to talk about how to eat your own harvest, knowing that there are lots of vegetables that boil from the waste that is usually thrown away. It is one thing to have a garden or a garden in which to germinate seeds. But something even more stimulating is to cause outbreaks of the plant residues, from which they regenerate. Few know it, but doing it is possible and also, very simple.
Not all vegetables have this resilient quality, but those that do have only require a few gadgets and a lot of patience to regenerate themselves and thus, they can begin to provide us with an infinite source of organic food.
Remember, the quality of the plant remains that will determine the quality of the regrowth. So, when possible, I recommend buying local organic products, so you know that your plants are fresh, healthy and free of chemicals and GMO.

FLOORS, ONIONS, GARLIC AND FINE
You can use the white end of the root of an already cut vegetable, or buy a handful to use specifically for the crop.

Simply place the white end of the root in a glass jar with a little water and leave it in a sunny place. I do it in the kitchen window. The green and leafy part of the plant will grow again. When you are about to cook, you can simply cut what is needed and leave the root in water to keep growing. Change the water every 2-3 days.
APIO, LETTUCE AND REPOLLO
That piece of stem that we always throw can regenerate lettuce leaves in a very short time. You will have salad for eternity.
Place the stem in 3 centimeters of water.
Put it next to a source of indirect natural light.
Change the water as you absorb it.
Cut the leaves when you want a salad, and continue to germinate the leaves with the same stem.
Similar to leeks, these vegetables grow back from the end of the white root. Cut the stems as you normally do and place the end of the root in a shallow bowl - with enough water to cover the roots, but do not cover the top of the cut. Place it in a sunny window, spraying the cut from time to time with water to keep the top moist.
After a few days, you should start to see new roots and leaves sprouting. After a week, you can transplant it in the garden. The plant will continue to grow, and a new head will sprout within a few weeks.
Alternatively you can plant them directly on the ground (without starting the process in water) but you will have to keep the soil very humid in the first week until the new shoots start to appear.

GINGER
Ginger is very easy to replant. Simply with a piece of ginger rhizome (the thick gnarled part) in compost, with the buds upwards. In the shade, in a warm and humid environment.
In a short time it will begin to take root and new shoots. Once the plant is established and ready for harvest, pull up the entire plant, with roots and all. Remove a portion of the root and replant to repeat the process.
Ginger is also a very attractive indoor plant, so if you do not use much ginger in your kitchen you can enjoy a colorful plant in your kitchen.

POTATOES
Choose a potato that has robust shoots and cut it into square pieces, ensuring that each piece has at least one or two shoots of around 4 centimeters. Leave the cut pieces to stand at room temperature for one or two days. This prevents decomposition after planting.
Potato plants appreciate the soil rich in nutrients, so it is better to fertilize the soil before the plants. Plant the pieces about 20 cm deep with the buds facing upwards and cover with about 10 cm of soil, leaving the remaining 10 cm free. When the plant begins to grow and more roots appear, add more soil.
GARLIC
Many do not know that this is what the garlic with stem looks like, and even less, that it is edible. You just have to avoid cooking the first part, as it tends to be bitter in the fire. The rest has a taste similar to garlic but softer, and less time on your palate.
Place a bulb in a transparent cup.
Add water to cover 1/4 of the bulb.
In 1 week you will have these delicious stems to use in the kitchen.

You can re-grow a plant with only one tooth - just by planting it with a lot of direct sunlight. Once established, trim the shoots and the plant will put all its energy into producing a large and tasty garlic bulb. And like ginger, you can repeat the process.

ONIONS
Onions are one of the easiest vegetables to spread. Just cut the end of the onion root, leaving 1.5 cm of onion in the roots. Place in a sunny place and cover with earth. Make sure the soil stays moist. Onions prefer a warm and sunny climate.
Your success may vary, depending on your climate, the season, the quality of the soil and the sunlight available in your home or garden. And some vegetables spread more easily than others. And there's nothing like eating your own harvest.
