250g of flour
30 cl of milk (semi-skimmed)
20 g of sugar
1 sachet of baking powder
3 eggs
40 g of butter
1 pinch of salt

In a salad bowl, mix the flour, salt, sugar and yeast. Add the milk, mix well. Stir in the eggs and mix again.

Melt the butter in the microwave at low power, or in a bain-marie. Pour it over the pancake batter and whisk vigorously to obtain a homogeneous preparation.

Butter a non-stick frying pan and place on high heat. When it is hot, pour a small ladle of pancake batter. Cook until small bubbles appear on the surface of the pancake. Slip a spatula under the pancake, turn it over and let cook 1 to 2 minutes.
