Cooking(Braai) Fish

For those of you wondering what a braai is, its what we South Africans Call a BBQ , the difference is, a braai is ,when you use wood or charcoal, NO GASS...

For those off you following me will know i had a Fantastic fishing weekend away and this post will be about cooking Fish on the Braai.
I have promised friends of mine that I will be bringing fish home and that i will cook fresh fish for them so here we go...

First step is to Start your Fire, you need Wood and firelighter or Blitz as we call it here in South Africa.
Make sure the Fire starts let it burn and start preparing your food.

Second I clean the fish Descaled them and fillet them.

I then marinade the fish with Sweet Basil, Lemon & Black Pepper seasoning

Next step i make a butter lime Garlic Sauce.
Required:
1 Lime
1 Cup Butter
Salt
Pepper
3 Tablespoon garlic Cut up.

Add your Garlic, Lime, butter, Salt and pepper in a small bowl and putt it into the microwave for 30 seconds - 1 Min.

You should have a running Garlic butter sauce the smell will drive your taste buds crazy.

Now Use a table spoon and poor some off your Garlic Sauce over the fish , Gently with my hand i rub the Butter into the fish.

Get hold of Tinfoil and cover your Roaster with Tinfoil.

Take your Butter/Garlic sauce and spread a small amount over the tinfoil.

Place your fish fillets onto the Tinfoil.
The remaining butter i will add onto the fillets

Next step is to make sure that your fire has burned out and you have warm red glowing Coals . Close the roaster and Putt it foot high above your coals.

Cook for 15-20min just before you take the fish off turn it upside down to seal the top.
And there you have it a perfect Braaied Fish.
