A camping trip isn't complete without a dinner prepared over an open fire. Nothing compares to the delectable smoky flavor of food cooked over an open fire. If you don't want to spend too much time in the kitchen, there are lots of time-saving and easy-to-prepare dishes to choose from. Dinners in a foil package are a wonderful example; all you have to do is heat them up over your campfire and they're ready in minutes! You can even do this at home using your oven at 325 degrees at 45 minutes.
Ingredients:
1/2 kg. boneless and skinless chicken breast, cubed
1 cup sliced fresh mushrooms
4 small potatoes, skin removed, cubed
4 cloves garlic, sliced
2 onions, diced
1 red bell pepper, seeded and sliced into strips
1 yellow bell pepper, seeded and sliced into strips
1 lemon, juiced
1/4 cup olive oil
Salt and pepper, to taste
Mix together the chicken, mushrooms, potatoes, garlic, onions, red bell pepper and yellow bell pepper in a large bowl. Add the lemon juice and olive oil to the bowl and season with salt and pepper. Toss to coat chicken and vegetables with the oil and juice.
Divide the mixture into 4 large aluminum foils and fold to create packets. Cook over grill or hot campfire coals until potatoes are tender and chicken is cooked through, about 40 minutes. Remove from heat and allow to cool for a few minutes before serving.
