Well here I am taking part in Patelincho's Bacon Challenge.  There has been a good entry for this competition and some really interesting dishes produced.  I do not expect to do very well as I have decided to use bacon lardons in my brunch dish rather than the usual rashers of bacon most others have used.  Nevertheless, we have all got to support these challenges, or what is the point of people going to the time and trouble to put the challenges together.  So come on Steemians, get cooking that bacon!

Loaded Bacon, Egg and Vegetable Potatoes

Ingredients:

Bacon Lardons

Potatoes (Boiled in their skins and allowed to go cold)

Onions

Garlic

Grated Root Ginger

Dried Spicy Chillis

Vegetables (Your choice, thinly sliced.  I used leek, grated carrot, celery (and their leafy tops, for adding towards the end), and spinach)

Tomato

Egg and Milk

Salt and Pepper

Oil for frying

Method:

  1. Boil potatoes in their skins until soft and leave on one side to cool.
  2. Fry off the bacon lardons in sufficient oil so that later the vegetables can be sautéed off.
  3. When cooked, take the lardons out of the oil and leave on one side until later.
  4. Put the sliced onions, mashed garlic, chilli, and grated ginger into the bacon flavoured oil and soften a little.
  5. Add the rest of the thinly sliced vegetables and cook together until as soft as you want.  I like a little 'bite' left in mine. Season this vegetable mixture.
  6. Take out of the pan and put with the bacon lardons.
  7. Wipe out your pan and add extra oil for frying the diced potatoes.
  8. Dice up your potatoes to the size you want and put in the hot oil.
  9. Fry until they are the colour you like.  Don't forget to season the potatoes!
  10. Meanwhile, chop up a large tomato and the celery leaves.
  11. When the potatoes are coloured sufficiently, add back the bacon lardons and vegetables.  Stir well.
  12. Top with the tomatoes and celery leaves, again stir well to ensure even distribution.
  13. Put a lid on and cook until the tomatoes are as soft as you want and everything is warmed through.
  14. Add milk to an egg with some seasoning, and fork whisk to combine.
  15. Pour this egg mixture over your vegetables.  Shake the pan so that the egg works through the mixture.  (Do not stir or you will have scrambled egg instead of the egg 'binding' all of the ingredients together).
  16. Cook until the egg is set in the centre of the mixture and the base is as coloured as you like.  (I prefer it to be coloured on the bottom as it gives a nice crunch to the outside).
  17. Place your serving plate over the frying pan and invert.  The Bacon, Egg and Vegetable, Loaded Potatoes will fall into the plate easily just with a shake.

This is a 'sharing dish'; serve in the centre of the table with chunks of crusty bread, and dressed salad leaves - enjoy!
