Oh-mer-gawd! Just made this Vegetarian Shepard’s Pie adapted from the @jamieoliver vegan recipe (because we like cheese on top of mash!) anyway what can I say....
it was A M A Z I N G.
Even Bonnie polished most of hers off. Even Leah polished most of hers off too (and she is fussy when it comes to eating veg) Winner Winner veggie dinner 🥕🍠🧀
It is packed with lentils, chickpeas, mushrooms, sundried tomatoes, carrots, flavour and more. Super yummy. If the family keep eating up all of their dinners, I might actually start to enjoy cooking. 😏
I am a fan of Jamie Oliver recipes. However if I ever met Jamie, I would say: “No Jamie, your 15 minute meals DO NOT take 15 minutes with a toddler around your feet. Oh and by the way Jamie, your quick and easy recipes are NOT quick and easy with a toddler hanging on your leg” 🙄
Have a word with him would ya Joules - a book named easy cooking while amusing a toddler 👍🏻

I think it’s the sun dried tomatoes that makes it so yummy! and the mash topping (breadcrumbs, rosemary, oilive oil, garlic and lemon zest) gave it a nice twist too
