Carrot cake

I bought a lot of carrots yesterday so I decided to bake carrot cake. I haven't baked it for a long time.
In addition, I was in the mood for it. It was so good with nutty texture and aromatic flavor.

Ingredients:
Wet ingredients:
175g melted salted butter
80-100g brown sugar
3 eggs
1 teaspoon vanilla essence
Dry ingredients
200g all purpose flour
1 teaspoon baking powder
1/2 teaspoon cinnamon powder
1/2 teaspoon nutmeg powder
Others
175g grated carrots
100g raisins
100g roasted walnuts

Method:

  1. Preheat oven at 170 degree Celsius.
  2. Sift all dry ingredients and combine into a bowl. Leave aside.
  3. Whisk melted butter together with sugar in another bowl. Add one egg at a time then add vanilla essence.
  4. Pour the dry ingredients into the wet ingredients.
  5. Stir in grated carrots, raisins and walnuts. Mix them well.
  6. Pour into cake pan.
  7. Bake for 40-45 minutes.
