Smoothie Of The Day: Refreshing, Minty Green Dragon

Dragon fruit, or pitaya, can be found in Mexico, Central America, South America, and Asia. Hawaii is the only place in the United States where dragon fruit is grown.

If you have never had this fruit it might disappoint you at first. Given its bright color and exotic, pink appearance, the dragon fruit has a surprisingly bland flavor. Something in between a mildly sweet melon and kiwi fruit. But I love its texture. Such a pleasant experience and refreshing fruit on a hot summer day.

The fruit is rich in vitamin C, beta-carotene, vitamin A, fiber, and lycopene.The seeds of the dragon fruit are similar to kiwifruit and are completely edible. Unlike passion fruit or papaya seeds, they will nicely blend up in any blender.

Ready for some morning power? I'm already going for a second glass!

Ingredients

1 cup pineapple chunks
1 big dragon fruit or pitaya
1 banana
1/2 cup fresh kale
1/2 cup fresh spinach
1/2 cup fresh mint leaves
1 tbsp grated ginger or 1 inch
3 cups of water

Directions:

  1. Blend spinach, kale, ginger, and mint until smooth. Add the remaining ingredients and blend again. If the smoothie is too thick for you, add more liquid base. If you have a high-speed blender you can blend everything at once.
  2. Top with toppings/superfoods of your choice (chia seeds, desiccated coconut, hemp hearts etc.)

Beautiful recipe Amy! I've had dragonfruit once before and it was interesting...kinda soapy. I live in Canada so perhaps it was picked and shipped underripe. What is the quality of dragonfruit where you live? Thanks for posting! <3

Since they grow here in abundance we have some great pink and white dragon fruits all year round! I'm sure they will taste different in Canada. Thanks for stopping by. Looking forward to seeing some of your creations too ;)

I do like a green smoothie! That mint looks good with all the rest of that! When I lived in Tucson, AZ for awhile, I would ride my bike in the alleys - and every now and again I would find ripe, neglected dragonfruit. They were good!

I love the texture of this fruit! Here they are super cheap, but when we lived in Europe we never bought them because they were so expensive. So lucky finds! I would eat them all too. Hate to waste good food. Thanks for your comment @haphazard-hstead!

I've never bought a dragonfruit -- they are expensive here, too. I got a lot of grapefruits from the Tucson alleys, too. It's amazing that people don't eat all their fruit. But out of sight, in the alley, out of mind.
