Good morning fellow steempunks. Last day in Siem Reap.... getting really excited for the big move tomorrow. Everything is ready and packed. Yesterday we emptied the last bits in the fridge and freezer, hence this papaya ice cream!
If you never made soft serve fruit ice cream before then I can highly recommend making them. they are the perfect healthy treat to address your sweet cravings. And the best part. They are super easy to make. And you can use any fruit you like. We had some frozen papaya left in the freezer, so papaya ice cream it was ;)
Homemade Papaya Ice Cream
Ingredients
Frozen papaya chunks
Nut milk of your choice (I used almond milk this time)
Optional toppings: cacao nibs, goji berries, cranberries, mulberries, coconut flakes, sliced almonds, pistachios, etc.
Directions
- Peel, chop and freeze papaya.
- When frozen, add them to a blender and process adding nut milk to desired texture of a soft serve ice cream.
- Top with your favorite toppings. I used dried goji berries, cranberries, mulberries and sliced almonds.
FYI: I served mine with a local green tea with jasmine.
Enjoy this healthy and yummy sweet treat!

I love to turn frozen fruit into ice cream but I've never tried it with papaya! It just so happens that I have a little papaya sitting on my countertop, so I might just have to freeze it up! Also I love the jasmine tea pairing - yummm!
