Good morning/evening fellow steempunks. I hope you are all enjoying the weekend! Here in Cambodia, we are celebrating the Khmer New year which started Friday and lasts till Monday!

It is called β€œKhmer” New Year because Khmer are the dominant ethnic group within the nation who celebrate this new beginning of the year. Ninety-five percent of Cambodia’s 15 million people follow Cambodia's official religion which is Theravada Buddhism. Following the calendar of the Buddhist religion, the Cambodian New Year falls on either the 13th or 14th of April, depending on the ancient horoscope readings called β€œMaha Sangkran.”

Khmer New Year marks the end of the harvest which is significant since the majority of the population are still involved in agriculture. The earlier lunar calendar that marked the new year was abandoned in favor of the present solar-based one to ensure the holiday falls just after the rice harvest and before the start of the rainy season.

INGREDIENTS (SERVES 2 FOR BREAKFAST)


  • 1.5 cup chopped peaches
  • 1 large banana
  • 2 cups fresh spinach
  • 2 cups unsweetened almond milk
  • 1/4 cup rolled oats
  • 2 tbsp almond butter
  • 1/2-1 tsp vanilla extract (optional)
  • 1/2 tsp ground cinnamon (optional)
  • Hemp seeds (optional topping)

FYI: chop and freeze banana and peaches before blending. this will add extra creaminess and chill the smoothie. You could also use a few ice cubes instead!

DIRECTIONS

  1. Blend spinach and almond milk until smooth. Add remaining ingredients and blend again. If the smoothie is too thick, add more water or almond milk and blend again until smooth. If you have a high-speed blender you can throw in everything at once.
  2. Optional: Top with hemp seeds or other superfoods/toppings you like.

Thanks, @birdsinparadise. Unfortunately, there are no peaches in Cambodia. Only imported ones. But sometimes I buy them because I miss them so much! We have been living here for 4 years now! I will write a post about it once my life gets a little bit quieter. So busy these days! Especially with the New Year that normally lasted until Monday but here on the coast festivities went through till yesterday. Also arranging things for the bakery and coaching my online clients. Think I will need a holiday soon hehe! Hope you are doing well too!
