Are you tired of eating overnight oats or a bowl of yogurt? Then, look to chia seed pudding for an equally healthy and delicious breakfast or snack option.

Despite their tiny appearance, chia seeds are a packed with so many good-for-you nutrients. They’re a rich source of omega-3 fatty acids, antioxidants, calcium, fiber, and protein. Plus, these tiny little seeds have another trick of their sleeve. Did you know that they can absorb up to 10 times their weight in water while forming a gel-like substance? This makes them the perfect ingredient to thicken puddings and chia jams.

Though the recipe below is one of my many chia pudding experiments, don’t be afraid to put your own spin on them. Make them with your favorite fruits and toppings.

Ingredients

For the pudding

1.5 cup fresh, ripe pineapple chunks
2-3 passion fruit
1.5 cup coconut or almond milk
3/4 cup plain yogurt or coconut yogurt for vegans
1/4 cup chia seeds
1/2 tsp vanilla extract
2-3 tbsp maple syrup or honey

Toppings

Fresh pineapple cubes
Passion fruit pulp
Homemade granola

Dried mulberries
Coconut flakes

Directions

  1. Combine all ingredients in a blender or food processor and blend until smooth.
  2. Pour in glasses, bowls or jars with lid for take-along option and chill in the fridge for a few hours. Overnight is best.
  3. When ready to eat or take with you, top with superfoods/toppings of your choice.

Amazing recipe! Thank you for sharing.

Thanks @michaelstobiersk! Glad you like it!

You're welcome! Have a great day.

Love those power Chia seeds! Do you soak them for a few minutes first, before using them? I have read that this helps by turning them in to a more gelatinous form.

Readers might find this interesting, I am looking into this myself: "Growing and harvesting Chia" - https://dengarden.com/gardening/How-I-grow-and-harvest-organic-Chia

Thanks for sharing! I'll definitely try to grow some once we move house. Yes, they turn into gelatine, hence their use to make pudding or jam. When you blend them or mix them with any liquid they will start to form a pudding or jam. You can soak them in water too for a vegan-style "egg" you can use as a substitute in baked goods. Have a great day!

These look amazing @amy-goodrich :) Have almost everything in the pantry, giving this a try for sure

Thanks @nickoskitchen! The recipe works with any kind of fruit you like. Enjoy ;)

Will have to try and make this now!! looks so yummy

Enjoy! We love chia pudding! You can substitute the fruit with your favorite fruits. Thanks for dropping by!

Hehe! Thanks @oddnugget! So many great cooks here on steemit! Love it!

Congrats, I have zero patience to cut pineapple...Healthy and nutritious breakfast. I would still need a coffee afterwards ;) Cheers!

Hehe! There are some handy tools for that (https://shop.body-in-balance.org/collections/spiralizers/products/handy-stainless-steel-pineapple-peeler). I had a coffee with it too ;) What's a morning without a delicious, fragrant black coffee? Have a great day ;)

mmmmmmmmmmmmmm I'm sure this taste amazing, I have made the decision to eat a higher percentage of vegan meals from now on.
I think it will help me a lot achieve some goals I have
I might even go completely vegan :P Who knows... hahaha

Thanks for the recipe I might try it soon, There is so many good pineapples around at the store now

That's so great to hear. Adding more plant-based meals to your diet is so beneficial. It helped my hubby go off his weekly sick-making injection for MS.

oh yeah, I do have a healthy diet I am just convincing myself that I should do it all the time and mostly 80% vegan, which I'm not that far away I just never say no no anything :P maybe I need to start hahaha

hehe! know that feeling! No worries little cheat days are ok ;)

So gladness I joined #steemitfoodnetwork chat & saw your post! Super yummy stuff you have here! Where in cambodia do you reside? I lived in Phnom Penh half the year last year 💙

Lived in Kampot for 1.5 years and now in Siem Reap for 1.5 years. But moving back in few months to either Kampot or Kep. SR is a lot of fun but getting too busy these days. How did you enjoy PP?

I truly loved it, but really enjoyed going to SR as a little get away. PP much busier than the smaller cities but I loved the hustles. Kampot / Kep is truly stunning. I did some work with Knai Bang Chatt while I was there.

We love Kep and Kampot! SR has become so busy these days. Too many cars and too many buses... and it's such a small town for all those fancy big cars. If you ever plan on coming back, def let me know! Always welcome at our place ;)

Yes I completely understand. SR is perfect in off season! I do look forward to going back to SE Asia & Cambodia will always hold a special place in my heart and so many wonderful friends there, glad to add a new one to the list!

No more off season in SR it seems :( Glad to meet you too and know that you are always welcome at our home. No matter where we live at that time.

Thanks @padmakshi!

Nice recipe!!! This is for lose weight. Ananas, passion, oats. All this thing help to keep your body slim.thank you for you great post.

Thanks, @creativewoman! If using for weight loss I would recommend using almond milk since coconut milk has a lot of calories. And go easy on the granola topping too. Have a great day and thanks for your support ;)
