Vietnamese kebab rice noodles recipe.

Bun cha or kebab rice noodles is one of especially in Hanoi-Vietnam, this dish made from traditional, they has balls kebab and pieces kebab are grilled. Combine with special dipping sauce, rice noodles and vegetables.
I wrote about this food, but today, i want to show you about other recipe.

Ingredients.

  • 300 grams of pork side (thinly sliced into pieces).
  • 300 grams of minced pork.
  • 20 piper lolot leaves.
  • Rice noodles.
  • Vegetables: lettuce, coriander and Vietnamese balm (optional)-sliced.

For marinade

  • 3 shallots (finely chopped).
  • 4 cloves of garlic (finely chopped).
  • 2 tablespoons caramel water.
  • 2 tablespoons of sugar.
  • 2 tablespoons of ground black pepper.
  • 4 tablespoons of fish sauce.

For salad

  • 1 carrot (very thinly sliced).
    Prepare the salad: Mix well carrot with sugar and a little of rice vinegar for about 15 minutes before eating.

For dipping sauce

  • 500mls of warm water.
  • 50mls of fish sauce.
  • 80mls of rice vinegar.
  • 50 grams of sugar.
  • Black pepper, chilli, garlic (finely chopped).

Instructions.

  • Marinade the pork side, minced pork with shallot, garlic and all of the ingredients in For marinade. Mix well for at least for about 2 hours or over night in the refrigerator.
  • For pieces kebab: After marinade meat-skewers with sticks.
  • For balls kebab: After marinade meat-wrap it with piper lolot leaves and grilled on the both side until golden.
  • Prepare the dipping sauce: Mix well al of the ingredients in For dipping sauce until the sugar is dissolved, add sugar, fish sauce and rice vinegar to taste.
  • Serve the cooked meat with dipping sauce, salad, rice noodles and vegetables.
