Steaks not mistakes

It takes time to make a proper steak, got to take it out of the fridge put on the yummy stuff that's garlic, olive oil. salt only when you're ready to put it on and of course fresh ground black pepper.

Remember you want steaks, not mistakes. It often comes down to the choice that no one really wants to make, but has to be made, do you want to go hipster charcoal cool guy as that takes 4 hours to make a steak or you just want to get a rip-roaring propane fire going on the BBQ and have your steak in record time.

Kidding about the hipster charcoal dude but it does take a lot more time, I love a good charcoal barbecue, sometimes you just don't have enough time to commit when you get home after work.

Little pro-trick for thick steaks like this one, a bone-in prime rib 36 ouncer, is to get the nice char marks on both sides and finish in a 400°F oven which provides not only consistency but saves a lot of time.

Recipe:
36 oz bone-in rib steak
Olive oil
S&P
Good quality garlic

Let steak come up to room temperature in this case 1 hour, push well chopped garlic between fat & meat of steak, only add salt just before putting on bbq.
Grill 4 to 5 minutes a side at high temperature then into oven at 400° for 12+ minutes, 10 to 12 minutes will give you a nice rare steak.

Serve with veggies, i like mushrooms and onions sauted in a little oyster sauce.

Enjoy, and remember if you don't eat vegetables, you'll die.
