Honey Tarragon Chicken | Tropical Lunch Recipe

I live in the tropics where its summer 362 days in the year (including today). So this might not be the season for light meal for most fellow Steemians, but who knows, it was so delicious and so easy to prepare, that I couldn't help myself, had to share.

Ingredients (for 2 plates):

Organic spring mix (with lettuce, spinach, arugula and radicchio)
2 Chicken breasts - cut to long strips
2 Tbs of Honey
1Tbs of Cooking oil
1tsp of Tarragon
1 avocado - cut to small pieces
1 cup of fresh raspberries
1/3 cup of crushed pecans
1/3 cup of crumbled feta cheese
2 Tbs chocolate balsamic vinegar (a little pricey ) / or substitute with raspberry vinaigrette
Salt, cayenne and black peeper

Cooking Instructions:

  1. Place a frying pan on medium heat and
  2. Pour honey and oil on the pan, and a little cayenne, black pepper and salt.
  3. Once all ingredients are mixed and begin to shimmer, add tarragon
  4. Once tarragon is softened, add the chicken strips and mix everything evenly.
  5. Fry the chicken on medium heat until golden brown, mixing it occasionally to prevent it from burning.
  6. Prepare 2 plates and place a bed of spring mix.
  7. Sprinkle feta cheese, avocados, raspberries and pecans on top of the greens
  8. Place the chicken strips on top of the plate
  9. Garnish with chocolate balsamic vinegar
    Voila, all done! Pour some wine and enjoy.

awesome! and there are so many variations that you can play with - you can used apples, mango, radishes, figs blue cheese, dry fruits, you name it :)

I will try it for holidays for sure, never used honey in this way must admit but as I love to add new things into my cooking this will be nice to try :)

Here is another one i made, but this time with radishes and mangoes instead of raspberries. but the rest is the same

oh yeah, honey can make a very delicious and juicy chicken (and other meats i'm sure) i discovered it by accident when i didn't have enough oil to fry :)... but it turned out amazing! especially with the cayenne and salt in the mix

will try everything :)))
