Since I have shitloads of rhubarb in my garden I decided to make a cake. This rhubarb cake is simple, but really delicious! Here it goes:
You will need:
3 large eggs
2 dl sugar
2 teaspoons baking powder
3 dl flour
500 g rhubarb
150 g butter
1,5 dl pearl sugar
The next step is:
Whip egg and sugar into thick eggnog.
Sift in the flour and baking soda and gently stir the dough until it is lump-free (use a steel whip).
Bake the batter over a small (about 20x30 cm).
Cut the rhubarb in about 5 cm long pieces. Put them down nicely in the dough.
Cut the cold butter in thin slices and cover the whole cake . I use this genius norwegian cheese knife.
Sprinkle well with pearl sugar. The butter with pearl sugar will make the top nice and crispy.
Bake the cake at the bottom of the oven at 175 ° C for 30-40 minutes. Cool the cake down and Bon Appetit!
