There's nothing like a warm pumpkin soup when it's cold outside. Specially when you have absolutely no time and energy to start cooking!
The only thing you have to do is peel some pumpkin, cover it with water and let it boil while you set the table. Then puree it (with a handheld mixer, for example) and add a dash of olive oil.
I sometimes add potatoes, millet or dahl lentils.
One of my to-go dishes all year round but specially in autumn and winter.
