A few days ago it was my birthday. I didn't want to do anything big (it's not yet the time, next year, maybe :) ).
So most of my day I spent with my family. What I wanted to share with you is the special eggplant recipe from my mother's kitchen.
It is pretty simple really. You need eggplants, some rice, tomato sauce and that's it!
Eggplants are fresh from our garden, tomatoes as well, rice is not though :D
First, cut the eggplant and fry them in the pan (to make them softer), then put them on the side to cool down. In the mean time make the tomato sauce and cook the rice (season both of them as you like). Once the eggplants are a bit cooler carve them and cut the carved part into little cubes. Once the tomato sauce is done and the rice as well mix those two and the eggplants and fill the eggplants. Put some additional tomato sauce on the top and some breadcrumbs (to make it crispier).
Put it in the oven and bake it for 30-40 min on 200°C, or until you see it is done (soft).
That's it! Simple, right?
