The traditional Vietnamese sandwich, lobster version!
INGREDIENTS
3 radishes, thinly sliced
1/2 small carrot, finely julienned
1/4 English cucumber, finely julienned
2 tablespoons sugar
2 tablespoons vinegar
1/4 cup light mayonnaise
2 tablespoons unsweetened coconut flakes
2 tablespoons chopped fresh coriander or mint
1 teaspoon fish sauce
1/2 teaspoon scha sauce
1 lobster, cooked and peeled, minced meat
2 baguette rolls
sprigs fresh coriander or mint (optional)
salt

PREPARATION
In a bowl, combine radishes, carrot and cucumber. In a small microwave-safe bowl, combine sugar and vinegar. Salt. Microwave for 30 seconds. Pour mixture over vegetables and toss to coat well. Refrigerate for 15 minutes or until vegetables have cooled.
In another small bowl, combine mayonnaise, coconut, coriander, fish sauce and sriracha sauce. Add lobster meat and mix. Cut bread in half lengthwise (do not cut completely). Garnish the breads with lobster mixture, then half the marinated vegetables and coriander sprigs, if desired. Cut each sandwich in half. Serve with remaining pickled vegetables.
Good to know
A 1 1/4 lb (625 g) lobster is about 6 oz (180 g) of meat.
