Today I wanted to show people how to make vegetarian Sloppy Joe's. It's easy to make, delicious, and easy on the wallet too.

The hardest part of eating vegetarian for me, was that I loved diner food. Comfort food, if you will. B.L.T.'s, biscuits and gravy, pepperoni pizza, and Sloppy Joe's would be my definition of good eats. My solution was to make vegetarian versions if possible. Granted, there's no substitution pepperoni or bacon, so I bid them adieu. But these Sloppy Joe's hit the spot. Just don't forget the wavy cut potato chips!

First the ingredients. Tempeh is the substitution for ground beef. Tempeh is a traditional soy product originating from Indonesia. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. Tempeh is versatile. It can be baked, fried, or even grilled, and it's bland flavor makes it easy to season.

INGREDIENTS:
-1 lb. (two 8 oz. packages) Tempeh, finely chopped.
-2-3 tablespoons of oil. I use grapeseed because it's good for you, has no flavor, and has a -high burn temperature.
-1 medium green pepper, chopped
-1 medium sweet onion, chopped
-1 clove of garlic, minced (optional)
-1 can (15 ounces) tomato sauce, 3/4 can for a thicker consistency
-1/4 cup ketsup
-1 1/2 tablespoons of Annies Organic Vegan Worcestershire sauce
-1 tablespoon of brown sugar (more or less)
-coarse ground salt and pepper to taste
-1 bag Krinkle Cut Kettle Chips
-Hamburger buns of your choice. Slider size works great too!

Ok, first put your oil in the pan, heat it up, and add the finely chopped Tempeh. Fry for about 10 minutes, stirring often. Then add onion and green pepper, and fry for another 10 minutes, or until Tempe is slightly browned and vegetables are well cooked through. Add remaining ingredients and stir well. Allow to simmer on very low heat for 5-10 minutes so the flavors can meld. You can also tweak the ingredients to your personal taste. And there you go!
