Hello!
At first glance, this soup looks like a simple rich chicken broth with herbs, but its taste is difficult to describe. Imagine the lemon acidity dissolved in chicken broth smelling of cilantro with freshly baked bread!
It's delicious!
Difficulty: 3/10
Cooking time: 1.5 hours.
Number of servings: 5
Ingredients:
- Chicken, 500 gr.
- Eggs, 5 pcs.
- Onion, 120 gr.
- Flour, 30 gr.
- Lemon, 1 pc.
- Cilantro
- Vegetable oil, 2 tablespoons
- Pepper and salt to taste
Cook chicken broth. To do this, cut the chicken into small pieces, pour two liters of cold water and put on fire. Cook for one hour, periodically removing the foam.
Finely chop the onion and fry for three minutes:
Fry the flour in a dry pan:
As soon as you feel the smell of baked bread and flour begins to darken, turn off the fire:
When the broth is ready, pull out the chicken. Meat is separated from the bones and cut into small pieces:
Strain the broth, pour a small amount into a bowl and stirring constantly pour the fried flour:
The contents of the bowl add to the pan, there also put the onion, pepper, bring to a boil and cook for ten minutes. Remove the soup from the heat and allow to cool slightly (it's important).
Separate the egg yolks, beat them and carefully pour, stirring constantly, in a warm broth:
Add chicken, stir, taste, salt, pepper. Finely chop the cilantro.
Served with lemon and cilantro:
Bon appetit!
