An interesting option for the preparation of the famous Italian dish — with chicken, seasonings and mashed tomatoes.

Ingredients:
- Arborio rice or similar, 180 gr.
- Shallots
- Chicken fillet, 150 gr.
- White wine, 80 ml
- Mozzarella cheese, 50 gr.
- Butter, 20 gr.
- Mashed tomatoes, 100 gr.
- Spices to taste (here seasoning for chicken), 1/2 tsp
- Celery
- Parsley
- Vegetable oil
- Salt
Shallots and celery clean and cut into small cubes. Chicken cut into small pieces, chop the parsley finely.
Heat in a deep frying pan or saucepan 2 tablespoons vegetable oil and fry shallots over high heat for 2 minutes.
Add rice, fry, stirring constantly, five minutes.
Add wine and a glass of boiling water. Cook over medium heat until the water is absorbed.
Try, if the rice is not ready, add some more water, and cook until ready.
Add butter, seasoning, tomatoes and mozzarella, mix, salt to taste, cover with a lid and turn off the fire.
In a pan over high heat fry in a small amount of celery oil for 2 minutes. Add the chicken and fry for three minutes.
Combine chicken and rice, add parsley, mix.
Serve.
