Moroccan Msemen, puffed Moroccan pancakes .... a real treat to accompany your tea!!!

Hello, Steemians,
Today, I propose you the recipe of the Msemens, puffed Moroccan pancakes that are accompanied with butter, honey and a good glass of mint tea.

Ingredients: (For 12 pancakes, I used a 300ml bowl)

2 bowls of very fine semolina
1 bowl of flour
1 teaspoon salt
1 teaspoon of sugar (optional, but it helps to give a nice golden color to pancakes)
1/2 liter of lukewarm water
Butter mixture (50g) + Sunflower oil (50ml)

Preparation:

  1. In your robot or bread machine, mix the flour, semolina salt, sugar and add small warm water until obtaining a very smooth dough (about 5min at medium speed)

  2. Form small balls and let stand 5min

  3. Spread the dough with the butter / oil mixture, without tearing it, fold one side of the circle then the other half, then the other two ends to form a square, once you have finished, spread out well your pancake





  1. Heat a skillet over medium heat, put your pancake on the pan and add a little oil on top. After 2 / 3min, turn over your pancake and leave again 2 / 3min.

And here they are ready to be eaten! Enjoy!
