I love GOOD soup. If I'm given an option, I order the soup instead of a salad. Stick me in a deli and I'm gazing at the soup tureens wondering what's inside. Don't get me wrong, I'll happily scarf down a bowl of Campbell's Tomato Soup with my grilled cheese. I have cans of chicken noodle and clam chowder in my cupboard. They taste fine and serve as a quick meal when needed. But, I don't love them.

CoreLife Eatery has some pretty damn good soup. I've been there twice before and each time I've ordered their Spicy Ginger Steak & Rice Noodle Bowl. Today wasn't any different. I fully intended to get something different, but love has a way of making decisions for you.


The restaurant is in the same lot as a farmers market, which fits with the company's concept. Their mission: to serve clean, whole meals to those who want better options in their fast food. CoreLife wants everyone to enjoy the fresh taste and benefits of healthier eating.

The restaurant is set up cafeteria style, with a wall mural that clearly illustrates how to order. All of the food is cooked on site. You are able to watch some of the foods being prepared while standing in line. The base bowl begins with either greens or grains, and you can build from there. Next, additional items can be added such as cauliflower, parmesan crisps, edamame, etc.; though some will incur an additional charge. Finally, the bowl is finished off with either a dressing or a broth. There are many featured dishes, but most go for the Build Your Own Bowl option.

It was the tail end of the lunch rush and the place was still busy. I quickly placed my order and went through the line, happy the noise covered the growling of my stomach.


The portions are filling and each comes with a small slice of bread. I ordered their "Big Bowl" size ($8.95) and a refillable fountain lemonade ($2.95). They have several varieties to choose from (green tea lemonade, cayenne pepper lemonade, etc.) as well as water and other beverages. I went for my favorite, beet lemonade.


I sat down with my little metal tray (nearly tipping the tiny table because I am a klutz) and dug into my meal. The Spicy Ginger Steak & Rice Noodle Bowl is one of their featured items. This beauty has beef bone broth, grass-fed steak, rice noodles, broccoli, kale, shredded carrot, scallions, almonds, grated ginger, cilantro & a bit of sriracha to top it off.


It's delicious. The broth has an actual meaty taste without leaving that greasy feeling on your tongue. The noodles aren't mushy, like in many soups. The steak is tender, although I will probably add more the next time I order this. The kale and broccoli are crisp and give the soup a nice crunch. The flavors compliment each other perfectly. I hit the bottom of my bowl and tried to restrain myself from picking and drinking the last bits of broth. Tried.

While I'm not a fan of most franchises, CoreLife Eatery is an example of one that is getting things right. Perhaps my next trip I will finally try something new from their selections. I was so close to ordering a Tuna Poke Grain Bowl today. Or, perhaps I'll just place two orders. I don't have any shame.

I love this place. The broth is a bone broth, I believe.

Yeah. They roast knuckle bones and break down all that yummy marrow. Sounds a bit gross but it tastes delicious!

Nutritious too.
