One of my favorite veggies is bitter melon or bitter gourd some people call it bitter squash. I like the bitterness of it and it made it taste better because of the shrimp. A very healthy vegetable because it is rich in vitamins and minerals and used as a herbal remedy for a range of aiments including diabetes because it help reduce blood sugar levels. This can be blend and made into juice. Bitter but healthy.
