Baking for Everyone Series #1 - Scone

Hi everyone -

I am new to steemit and would like to share with you all how scones are prepared in a professional kitchen.

Hope that will you make your own delicious scones at home for your loving ones :)

Final products:

Ingredients (commercial quantity)

Dry:
6000 (g) of Plain Flour
330 (g) of baking poder
60 (g) salt
1020 (g) sugar

1350 (g) butter

Wet:
1200 (g) whole egg
1800 (g) buttermilk

600 (g) raisin - optional

  1. All dry ingredients - plain flour, sugar, salt, baking powder - are scaled together

  2. Mix dry ingredients with butter using paddle

  3. This is the result after 30 minutes mixing

  4. Pour in the wet ingredients - whole egg, buttermilk- and continue to mix wet ingredients to dry ones using paddle.

  5. Test the dough using small dough sample: the surface should be smooth and stable

    6,7. Raisin can be added if you want. Make big dough ball and cover the top with clinc film while leaving the bottom free of clinc film. Leave the dough for proofing at least 30 minutes, then roll until 12mm thickness

    8,9. Cut the rolled dough and flip up the bottom of the dough

    10,11. Egg wash twice, 10 min in-between

  6. Bake at 200 degree, 18 minutes until the egg wash on top changes to golden brown colour
