Strawberry Custard

Hi. Strawberry custard ready in the fridge for an easy snack or dessert

⚡300 ml milk
⚡6 strawberry
⚡1 tbsp chia seeds
⚡1 tbsp Cornflour
⚡1 tsp vanilla extract
⚡4 strawberries
⚡1 egg
⚡1 tsp honey
⚡1 tbsp water

In a small saucepan heat the milk until just about to boil, then take off the heat and set aside.

Mix puree strawberries , chia seeds, and cornflour in a bowl.

Once mixed, add the egg and beat until well combine.

Add a small amount of the warmed milk to the egg mixture and mix through.

Slowly add the rest of the milk and combine well.

Add the mixture back into the saucepan and return to the heat, constantly stir on a medium heat for 5-8 minutes until the mixture has thickened.

Once thickened, serve the mixture in 2 small bowls.

Cut the strawberries up and put them in a microwave safe bowl, add the honey and water and microwave for 2 minutes until the strawberries have softened.

Spoon the strawberry mix on top of the custard, once cooled cover and pop in the fridge to set overnight.
