Steemit Iron Chef Round 15:🌈 Mini Rainbow Burgers + Rainbow dips! 🌈

It's the last round of #steemit-ironchef challenge hosted by @progressivechef! and this weeks theme was Burger!

I have a history with Burgers, it was the one food that was holding me back from my fully vegan lifestyle (working in a restaurant that served juicy organic beef burger, cooked by an excellent chef, medium rare with chili and garlic sauce on top! - no my stomach isn't rumbling right now! ) Yes as you can imagine someone transiting into veganism and then working in an environment where these were getting served up was pretty hard and I relapsed sometimes, I have to admit!

In the end I had to take control and that's when I started making Aduzaki and Beetroot burgers, full of iron and protein and a deep red color that weened me off that medium/rare craving! It worked and also quitting that waitress job also helped too, was just a bit of a conflict of interest at the end of the day! It was obvious to me to make my specialty but like always when it comes to creating for a contest, I don't always have the final idea completely solidified until i'm in the middle of the action.

I actually ended up making a whole bunch of different foods that I just didn't use in the end, I must of been cooking for 3 or 4 hours, (not including the time taken to pre-soacked and pre-cooked different types of beans and lentils during the day) I completely got lost in the moment and you don't even want to see the state of my kitchen after that, I took a picture but I didn't want to ruin my post by sharing it LOL the whole time I had in my head to make some colorful dips and it just clicked that the burgers had to be colorful too. Of course as a vegan there are so many different options for vegetables to use in a veggie burger, the possibilities are endless!

Ingredients

Red Burger

Beetroot
Adzuki Beans
Spring Onion
Himalaya Salt
Seasoning (I used Khmer Tom Yum)
Chia egg

Purple Burger

Purple Cabbage
Brown Lentils
Spring Onion
Himalaya Salt
Seasoning (I used Marsala)
Chia egg

Green Burger

Raw green cauliflower
Chickpeas
Spring Onion
Himalaya Salt
Seasoning (I used Khmer A Mok)
Chia egg

The burgers are very fragile if no flour is used, I don't mind this normally for myself and I didn't used it in the red and green burger but because the purple burger was so moist (water got in the mix from the lentils not being properly drained) so I added spelt flour and the burger was a lot firmer than the others.

The sauces were made with mostly the same ingredients as you see above, red=beetroot, purple=cabbage, yellow=yellow cauliflower + a touch of avocado and then you can add chickpeas or I use sesame seeds a lot along with whatever spices of you want, you can use oil, water or lemon juice to soften the mixture and help it to blend nicely

I'm really happy with the end results, I find the colors so uplifting and there's something about it that just gives joy to the inner child, to be able to eat naturally colorful food and that is tasty and looks good too, it's so much fun! It's the first time I've made a purple burger and a purple dip and I will definitely try it again!

Because we all need a little bit of a taste of the rainbow in our lives!

I have several posts that I'd like this badge on if possible. 😂😂😂

lol, I will go look at your blog then :)

Hurray! :D Thanks.

oh my god! you are amazing.r eallly.. those just look.. incredible!

I totally agree with you Alex, just so amazing!!!

love love love the look of your burgers ... and you are so right we all need a bit of rainbow in our lives to lift the day and make us smile !

This is a glowing work of art and a very hard act to follow. Congratulations! I'm admiring this piece like crazy!

these look amazing, looking forward to trying out your recipes, well done very impressed.

Wow those colours are really fantastic! I have never seen such pretty burgers in my while life! And they are incredible healthy, you are a real master chef!
I know that feeling when you are lost in time and space while creating and them when it's finished you can see what a mess the whole kitchen and apartment is! When I am home alone with my little boy and create recipes and take pictures (most of the time), I already need to give him something to play with while I do my things, but he really knows how to make the place to a mess haha! Not just in the kitchen, but everywhere lol!;)

Absolutely in love with this creation! Such vibrant colors! It's amazing how beautiful colors you can get by only using natural ingredients and no artificial colorings :)

I was a bacon cheeseburger girl as a kid, but now I love some yummy veggie burgers like these! And rainbow, too?! Beef ain't got nothin' on colorful veggies. I would love to try one of each. :)

That looks like a winner to me. Love it!

Wooow that looks so amazing!! These burgers looks like they was made in heaven :)

These are absolutely gorgeous.

Those are beautiful! My kitchen looked like a disaster after making my burgers, too. I need to learn how to use the chia seeds instead of eggs. I'd llike to try all 3 of your burgers, but the cauliflower one sounds perfect!

really easy just chia and filtered water, i think its about one tbsp to 2/3 tbsp of water, im never precise, put in the fridge for 5 minutes and its done, check online for specific details. its very useful and effective replacement!

I can almost taste your burgers. That is my biggest weakness. No doubt that work did not suit you either LOL. If I had to choose one of the three I would have the third but I would put the three sauces, at least two would eat

haha, I didnt mind waitressing, I did it for 2/3 years and I learnt alot of skills, im a good performer, and i liked running around like crazy. It was a small but busy restaurant, but we were like a family, but it was too easy towards the end, and i was ready to leave, i also picked up alot of tips and tricks with making and presenting the food ;) but i dont want to do this kind of work again! I have to say of all the 3 burgers the red one was the tastiest :)

Siempre todas esas experiencias nos dejan un gran aprendizaje, yo elegí la tercera por los garbanzos que me encantan!

Wow wow wow. I can't believe those are food! So colorful! ❤❤❤

Wish I could taste them as I don't think I could make them as good as that.

hehe thank u for your lovely comment artgirl!

You're welcome. I think I commented on your red rice food post too. 😁 That's how I found you from the food contest.

It's beautiful, it's very creative of you to incorporate fresh ingredients to extract their nature colour, many avoid colouring.. Good job there!

wow thank u for ur comment, i hope u may also try the recipe but im sure ur vegan friend will love it, thanks for passing it on!

Wow those burgers look absolutely delicious! I might use them as a change to my black bean or sweet potato lentil burger :)

aw thanks for ur lovely comment, sweet potato burger sounds yummy

Wow, I'm speechless! Most colorful dish I've ever seen! I hear you with the relapse, It's easy when there is no temptation, so many good food to explore.

The presentation is awesome and love the chia egg- I will definitely use that in some of my recipes

im so glad to hear you will try the chia egg, its really easy just chia and filtered water, i think its about one tbsp to 2/3 tbsp of water, im never precise, put in the fridge for 5 minutes and its done, check online for specific details. its very useful and effective replacement!
