This dessert is a coconut rice with leychees and pistachios ( 8 servings)
Ingridients
Coconut rice:
- 1 cup milk
- 1 cup coconut milk
- 1 cup rice
- 3 tablespoons sugar
garnish:
- 24 lyches in syrup
- 1/2 cup ground pistachious
Special equipment
- measuring cup
Preparation
Coconut rice
Heat the milk with coconut milk until boiling; remove from heat. Stir in the rice, and cook, covered, over low heat until al dente. Add the sugar, mix well and cook a few minutes longer. Remove from heat and cool.
Cover the rice with plastic wrap and chill until serving.
Presentation
In a cup, glass or ramekin, alternate layers of coconut rice and ground pistachios. Garnish with trhee lychees on each plate.
