INGREDIENTS
1 tablespoon instant yeast
1 1⁄4 cups warm water
1 teaspoon salt
1 tablespoon olive oil
2 tablespoon sugar
3 to cups flour
METHOD
In the bowl of a stand mixer or in a large bowl (if mixing by hand), combine the water, yeast, oil ,salt,sugar and 1 1⁄2 cups flour. Beat to form a soft batter-like consistency. Add additional flour until the dough starts to come together. Add enough flour to form a soft dough that clears the sides of the bowl and knead for 4-5 minutes with an electric mixer or 8-9 minutes by hand until the dough is smooth and elastic.
place in a greased Tupperware and allow the dough to raise .
on a floured surface pat the dough down , make small balls approx 6 to 8 depending how big you want .
preheat oven to 220 degrees
start rolling out , try to roll evening and this shouldn't be thin .
place on a floured oven tray .
bake until you see them raising approx 2 minutes and turn them around bake for another 1 minute .
remove , place on a cloth close nicely and close with a packet or a tupperware
this will keep pita soft .
