Ingredients for 4 people
- 1 kg pumpkin
- 1 leek
- 2 cloves garlic
- 400ml coconut milk
- a mixture of seeds (sunflower, pumpkin seeds, pine) - or some of it
- spices: dried vegetables, coriander powder, bay leaf, salt, pepper
Preparation
First
Pumpkin, cut into quarters and bake in the oven at 200 degrees (about half an hour of baking).
Second
In a saucepan heat the oil on it 10-15 on low heat it cool leeks. At the very end add finely chopped garlic.
Third
When the baked pumpkin, slice it into pieces and put in a saucepan. Add about 4 dl water and stick blender mash. All leave to cook.
Add spices: a mixture of dried vegetables, salt, pepper, one bay leaf, coriander powder (you can also use your own combination).
4th
After 10-15 minutes add the coconut milk and cook for another 10-15 minutes.
SERVING
Serve sprinkled with the seeds previously baked at low heat.
