Grilled Chicken Breast, Potato Rosti, Spiced Pinto Beans with Huancaina sauce (spicy cheese sauce)

Chicken breast seasoned with salt, garlic powder black pepper, chipotle mango seasoning, cumin, thyme. Grilled and finished off in the oven with a squeeze of lemon juice

Pinto beans in a pot with tomato sauce, ketchup, cumin, cinnamon, chili powder, lime juice, salt, pepper

Potato rosti, boiled potatoes mashed with sauteed onions and garlic, grated parmesan, salt, pepper, cayenne. Formed into patties and broiled in oven with butter.

Huancaina sauce: in a blender add cream cheese, Aji Amarillo, saltine crackers, milk, sauteed onions and garlic, salt

Garnish with a spig of parsley
