One of the most raved about Pinoy food is our famous Sisig. Dubbed by no less than Anthony Bourdain himself, a Celebrity Chef and TV host as the "food to win the hearts and mind of the world". Originated from Pampanga, in the Northern Luzon area of the Philippines. It is believed that the first sisig was cooked by an old lady from Pampanga named Lucia Cunanan or "Aling Lucing" as most of the natives would call her. Originally, sisig is cooked pig's head with souring agent and grilled and then chopped. Fried with pig's brain and chicken liver. Her creation took the center stage and a lot other sisig recipes followed. Almost all eatery, restaurants and food hub would include sisig on their menu.
Since sisig has been a staple food for the Filipinos especially with beer, I will be sharing with you my own adaptation of the famous sisig.
Here are our ingredients:
Pork liempo, boiled with salt, chopped garlic and peppers
Grilled the liempo after boiling then chopped ( Here I used an electric griller but charcoal grill will definitely gives a better taste to this sisig)
Chicken liver, boiled and finely chopped
White onions, chopped
Green chilli julienne
Soy sauce
Oyster sauce
Saute the onions
add the finely chopped chicken liver.
Cook the liver for 5 mins before you add the pork. Let the pork cook on its own oil.
Now you need to mix the soy sauce and the oyster sauce depending on your taste. Add a teaspoon at a time. Mix then add some ground peppers.
Before you serve the sisig you can top it with egg, onions and more chillies and drizzle some calamasi zest.
So there you go, hope you can try our famous sisig. Best served with steamed / garlic rice. And best partner with beer on your Friday night out.
