Turkey Breast from the oven Stuffed with Mozarella, Pesto, Tomato, served with Sweet Potatoes (TIP!!)

Hi FOOD LOVERS! (I mean... we're all food lovers, right?)



Today, I have made a nice dish and is actually a reoccurring one. Sometimes I exchange Turkey for fish, which is a very good replacement as well :)

The ingredients:

  • Sweet potatoes, 2 pieces
  • Turkey Breast, 500gr
  • Garlic, 2 pieces (I love garlic so I used 4)
  • Onion
  • Mozarella
  • Yoghurt
  • One tomato
  • Fresh spicy peppers (only if you like spicy)
  • Red or Green pesto
  • Spring onion
  • Oregano
  • Salt
  • Olive oil


Preheat the oven to 180 C (350 F). Peel the potatoes and cut them into small cubes. When this is done, pick an oven dish and spread the potatoes. Sprinkle them a bit with oil and add salt, oregano, rosemary, and mix it together. Make sure you leave space on the half of the dish for Turkey.

As you were cutting already, cut the tomato, Mozzarella, Garlic and Onion in slices.

Cut your chicken breasts horizontally but make sure you don't cut through them entirely. Add a couple of spoons of pesto inside the chicken and then fill it further with Mozarella and the slices of Tomato. If you like spicy, blend the spiced peppers together with a bit of oil and add them to your breast as well. I have been using a home-made chili paste, will share the recipe in another article :)

Add the pieces of the breast to the oven dish and sprinkle a bit oil on top of it, followed by a bit of oregano, rosemary and a bit of salt. Also, add the slices of garlic and onion on top of the sweet potatoes.

Now, place your dish in the oven for the next 45/60 minutes (depending on the oven). In the meantime, squeeze one piece of garlic, add it to your yogurt, and mix together. When your dish still has 5/10 minutes to go, cut some spring onion into slices and make up your plate with the yogurt, followed by adding the spring onion on top of your sauce.

"BLEEEP BLEEP" Your dish is ready. Check if the Turkey breast is a bit golden brown and if yes, pick your dish out of the oven. If you doubt that it's ready, leave it in the oven for another 10 minutes.

Now, make up your plate and VOILA! Your dish is ready for consumption!!!!!
