Crispy and Healthy Waffle Recipe (Gluten and Dairy Free)

My Kid absolutely loves these waffles! She is super picky and refuses to eat any vegetables so I have to find creative ways to get her to eat them unknowingly. :). We are on a special diet called Nutritional Balancing (actually, it's MUCH more than just a diet) and a large focus of this program is eating A LOT of vegetables. The entire family has been on this program for a year and a half and it's absolutely amazing. I will be posting more on this later.

For now, I hope you enjoy this recipe for the crispiest waffles that I developed to stay as much in line with our program as possible. The waffles are actually crispier than traditional waffles made with wheat flour, eggs and milk. If you have a sweet tooth I'd suggest using sweeter vegetables such as sweet potatoes, butternut squash, pumpkin, carrots, etc.

Crispy Gluten Free Waffles


Yield: 4 large waffles or 8 small waffles

Ingredients:
I use all organic ingredients except for the almond flour which is difficult to find.

1 cup blanched almond flour
1/2 cup tapioca starch
1/2 cup carrot juice (may substitute with coconut milk, almond milk, raw milk or water)
1/4 cup cooked, pureed vegetables (I've tried pumpkin, cauliflower, purple cabbage, carrots, sweet potatoes and even a bit of onions)
1 flax egg (recipe below)
1 tsp vanilla extract
1 tsp lemon juice or distilled white vinegar
1 tsp baking powder
pinch of salt

Optional:
1/4 cup sugar free stevia or xylitol sweetened chocolate chips

Flax Egg Recipe:
1 Tablespoon of ground flax seeds or flax meal
2.5 Tablespoons of water

Add flaxseed meal and water in a small bowl and stir together. Let it sit for 5-10 minutes to thicken up.

Instructions:
Pre-heat your waffle maker while you are getting your ingredients together.

Add all the ingredients to a blender and blend on medium or high for a few seconds until it's mixed together evenly. If it's too thick and not mixing well add a bit of liquid 1 tablespoon at a time.

The batter will be on the thicker side, slightly thicker than cake batter. Use a spoon, ladle or pastry scoop to add it to your waffle maker. You may have to spread it out a bit since it's a thick batter.

For extra crispy waffles use a thinner waffle maker. For chewier waffles you can use a belgian waffle maker. Both types are quite good in their own way.

I typically double the recipe and freeze them. They heat up well in a toaster oven.

Have you tried making your own almond flour. It isn't too hard, and it is probably easier to find organic almonds than organic almond flour.
