Crispy Tuscan Blue Rosemary Fries

These fries were SO good!! I fried sliced red potatoes in my Lodge Cast Iron mini wok. After about 10 minutes, I added sliced yellow onions. When the potatoes began to take on a little color, I added sprigs of Tuscan Blue rosemary. This slightly infuses the oil, but sprinkling the crispy rosemary over the fries is AMAZING!! Seasoned with sea salt, black pepper, and granulated garlic. Served in one of my Lodge loop handled pans.

Tuscan Blue Rosemary... what's the difference? Tuscan Blue is one of the best varieties of rosemary for culinary use. I have grown it for years in one of my beds, and there is simply no comparison to what you might purchase in grocery stores. My rosemary gets quite a bit of sun where it is planted, so that makes the oils even stronger and more flavorful.
