Photo of the Day - Chipotle style bowl meal prep

Are you tired of cooking everyday? Meal preparation is the best way I've found to eat healthy, well-portioned meals without spending a lot of money or cooking all day.

I used food saver bags (which do well in the freezer) and vacuum sealed them after I had portioned out the meals. This meal is SO good, and can be heated up and eaten on it's own or added as a topper to salad greens.

Ingredients

  1. Cilantro
  2. Avocados
  3. Salsa
  4. Chicken Breast
  5. Hatch green chilies
  6. Brown Rice
  7. Yellow Corn
  8. Black Beans
  9. Romaine Lettuce
  10. Verde hot sauce
  11. Onion (sauteed with corn)
  12. Cayenne Pepper & Garlic (added to black beans)

The quantity shown above made 14 individual meals that I can keep in the freezer for a few months! YUM!
