Do you ever get cravings for dark chocolate or something rich and delicious? Well, I definitely do! But I didn't want to use any raw sugar. I just wanted to use only natural sweeteners. So here is a more natural approach to a chocolate truffle without too much sugar added! Hope you love these as much as I do!
Dairy Free Coconut Truffles
Ingredients
1 1/4 cup almond flour
1/4 cup shredded coconut
1/3 cup cocoa powder
1/3 cup pure maple syrup
2 tbsp coconut flour
2 tsp vanilla extract
Baker's dark chocolate (semi-sweet or bittersweet (less sugar))
Directions:
- In a food processor or blender add all the ingredients above (except the baker's chocolate) and blend until it forms in to a dough. *If you find the dough too stiff add 1 tsp or so of more maple syrup.
- With some cocoa powder on your hands, shape them in to 1" size balls and freeze them on a parchment lined baking dish for about 10 minutes.
- In the meanwhile, melt the dark chocolate in a microwave in 20 second intervals or less until chocolate is fully melted. Stir in between intervals.
- With a fork dip the truffles in the chocolate and place them back on the parchment lined baking sheet. Put back in the freezer and let them harden for about 10-15 minutes.
