It's only December and I am dreaming of summer already. You know what else I am dreaming of? A dessert! But since I am trying to eat clean and stay healthy I eat fruits as both snacks and dessert. Fruits are so versatile and so full of flavor and go well with dishes sweet or savory.
A great dessert idea for the weight watchers and people with a sweet tooth like me. Instead of indulging in fatty, sugary and processed treats why not try grilled fruit desserts? The options and variations are endless! Some fruits that are great for grilling are;
Watermelon
Cut the watermelon in thick wedges and then brush both sides with olive oil. Grill 1-2 minutes each side. Watermelon goes great with feta, greek yogurt, honey, mint and lime juice. Choose your favorite topping and voila! You'll be eating this dessert all summer.Strawberry
Strawberries are super delicious on their own and even better when covered in chocolate but grilled strawberries just takes it up a notch. Brush them with some balsamic vinegar or roll them in some brown sugar and grill them for 2-3 minutes. Eat them as is or pair with your favorite ice cream, greek yogurt or some lemon-mint sauce.Peach
One of my favorite fruits and also super easy to turn this one into a fancy looking dessert in no time. You can brush it with oil and grill as most other fruits or if you want something fancy, cut peaches in halves and brush them with butter. Sprinkle some cinnamon and sugar mix and grill for about 6-8 minutes. Top it with mascarpone, honey, granola and mint.Cantaloupe
Brush cantaloupe slice with honey, cinnamon, brown sugar and butter mix. Grill 5-8 minutes. Squeeze some lime juice and garnish some mint on top. Easy peasy!
